Piles of locally grown, organic Chioggia beets at the farmers' market. Uniquely beautiful, the outside is bright red and the flesh has alternating red and white concentric rings that resemble a bull's-eye. Chioggia's are an Italian heirloom, named for a fishing town near Venice.
